Chef Brian Cooper Returns To Valley To Lead New Farm-To-Table Signature Restaurant at the Wigwam Resort
Set to Open in January, Chef Cooper Named Chef de Cuisine of New Dining Concept at Iconic Arizona Resort
Phoenix, Ariz. (Oct. 26, 2010) – Chef Brian Cooper has been tapped as the chef de cuisine of the new signature restaurant under development at the Wigwam Golf Resort & Spa, as part of the $7 million rejuvenation underway at the legendary West Valley resort.
Leaving his post at the luxe Inn and Spa at Loretto in Santa Fe, N.M., Cooper will be making his return to the Valley at the Wigwam. He formerly served as the Executive Sous Chef at Lon’s at the Hermosa Inn and as the Restaurant Sous Chef at T.Cook’s at The Royal Palms Resort where he was honored to participate in the James Beard Celebrity Chef Tour.
Cooper will head the new farm-to-table dining concept replacing Red’s Steakhouse at the Wigwam, set to open in January. The new restaurant will debut alongside an unveiling of a rejuvenated resort to include all new dining concepts featuring two restaurants, a new pool, outdoor plaza, arrival experience and outdoor event venues. Elements of the resort’s 80 year history will also be returned to the historic property.
With local chef and James Beard Award winner Chris Bianco helping to define all resort menus, Cooper will work closely with Bianco in launching the new concept at the Wigwam’s signature restaurant which will focus on fresh local Arizona products and produce, and farm-to-table fare. No pre-packaged foods, no frozen desserts and partnerships with only the most reputable local growers and artisans will be at the center of the resort’s new overall approach to dining.

Cooper has traveled the globe working as a chef throughout the Western Hemisphere from Costa Rica to Alaska. Accolades include leading restaurants to coveted honors including Wine Spectator’s "Most Romantic Restaurant for Wine Lovers," and Bride Magazine’s “Most Romantic Breakfast.
